A coffee cake is one that can either be served with coffee or one that was made with coffee. It would take some practice but if you keep to it, you should be making good coffee cake and in good time too.

Here are some recipes you can use:

1. Plum Streusel Coffee cake recipe

Ingredients:

9 oz. butter, 1 egg, 12 oz. sugar, 1 pack vanilla sugar, 1 pinch of salt, 18 oz. flour, 1 pack baking powder, 54 oz. plums, 18 oz. curd, 1 oz. melted butter, 1tbsp. cornstarch, 1 tbsp. cinnamon, and some bread crumbs for topping.

Apart from these basic ingredients, you’ll need a baking plate and access to baking temperature of between 60 and 350°F.

Directions:

Prepare the baking dish by adding a butter smear throughout the plate.

Put nine ounces each of butter and sugar into a mixing bowl, add one egg to this and stir with a whisk. Add a pinch of salt and one pack of vanilla sugar when all ingredients show a uniform mixture.

Use the whisk again and mix for about 30 seconds.

To a separate bowl, add 18 ounces of flour and one pack of baking powder. Divide into two and pour the first half through a sieve into the first mixing bowl.

Mix vigorously again. Then add the second half of the flour and crumble. Put two-thirds of the pastry all over the baking plate

Now it’s time to prepare the topping. Put the 18-ounce milk cord in a new bowl, add melted butter, the remaining sugar, one pack vanilla sugar, cornstarch, and cinnamon then mix with a whisk.

Pour the topping over the pastry and spread gently with a spoon. Then move over to the plums. Cut in the middle, remove the seed and divide the plum into four without detaching any portion.

Line the plums densely all over the pastry. Crumble the remaining one-third of the pastry over the plums.

Now place the baking plate in 350°F heat for 50 minutes after which you should take it out and leave to cool.

That’s it, your plum streusel coffee cake is ready.

2. Classic Sour Cream Coffee Cake

Ingredients:

4 oz. flour, 6 oz. brown sugar 6 oz. butter, 1/4 tbsp. cinnamon, 1/2 tbsp. salt, 2 oz pecans, 4 oz butter, 8 oz sugar, 2 eggs, 8 oz sour cream, 10oz  flour, 1/4 tbsp. baking powder, 1/2 tbsp. baking soda, 1/2 tbsp. salt, 3 oz powdered sugar, 2 tbsp. maple syrup and 2 tbsp. milk.

Directions:

Add the flour, brown sugar, cinnamon, a pinch of salt and cold cubed butter into a mixing bowl. Use your hands to mix the butter with the other ingredients until you get something that feels like bread crumbs.

You should get brown well-mixed crumbs if you did it right. Add chopped pecans to this bowl and mix with a spatula. When you’re done, keep the streusel mix aside and get another bowl.

Put room temperature butter into the new bowl and add white sugar. Mix both ingredients, an electric hand mixer will be ideal but you can use a manual one till you get a consistent blend.

Mix for about five minutes till you get a pale product. Add your eggs one at a time and wait till the first is combined before adding the next. Then add more flour, salt, baking powder, and baking soda.

Now add the sour cream into this bowl and mix until it’s combined. Add half of the pastry on your baking plate. Then add half of the streusel mix on the pastry and add the remaining cake mix on top of the streusel mix.

Pour the remaining streusel on the cake mix so it forms the top layer. Bake the cake at 350°F for an hour.

While the cake is in the oven, you can make some glaze to use in topping the baked cake. Mix maple syrup, milk and powdered sugar in a bowl and mix with a whisk till it’s done.

When the cake is done, pour over the glaze while it’s still warm and enjoy your coffee cake.

How To Store Coffee Cake

It’s possible you don’t finish your cake in one day but freshly baked coffee cake should be okay till the second day.

After that, you can cover it with a plastic wrap and store in the refrigerator for about a week.

The smell or growth of molds on the cake should tell you it’s time to throw away.
